Pani Puri or fuchka or Gupshup or Golappa or Pani ke Patake is a type of chat (snack). It is one of the most common street foods in India.

Pani Puri consists of a round or ball-shaped, hollow puri (traditionally a deep-fried crisp flatbread), filled with a mixture of flavored water of date chutney and mint water.

Healthy Oil-Free Pani puri

Ingredients

  • Pani Puri Filling
  • 1/2 Cup Garbanzo Beans

  • 1/2 Cup White Peas

  • 1/2 cup Black Chickpea (kala Channa)

  • 1/2 Mung beans.

  • 1 TBSP Chat Masala (available on amazon.com and Indian store)

  • 1 TBSP Black Salt (Kala Namak, available on amazon.com and Indian store)

  • 1 TSP Salt

  • Instant Pot/ Pressure Cooker

  • Meethi Chutney (Made with Dates)
  • 12 Pitted Medjool Dates.

  • 1/4 cup Jaggery Powder

  • 2 TBSP Dry Mango Powder (Amchur)

  • 1 TBSP Red Chili Powder

  • 1/4 TSP Salt

  • Blender/ Grinder to make into a Fine Paste

  • Thika Pani (Mint Water)
  • 3 Cups of Ice. Ice will help to retain the green color

  • 1 Big Bunch of Fresh Mint Leaves

  • 1/2 Bunch of Fresh Cilantro Leaves

  • 1 inch Ginger Peeled

  • 2 Thai Green Chilies

  • 1 TBSP fresh lemon juice

  • 1 TSP Cumin Seeds

  • 1 TSP Chat Masala

  • 1 TSP Black Salt (Kala Namak, available on amazon.com and Indian store)

  • 1 TSP Salt

  • 1/2 TSP Black Pepper Powder

  • Blender/ Grinder to make into a Fine Paste

  • For Oil Free Pani Puri
  • Conventional Oven OR an Air fryer needed to bake or air fryer the Puris

  • Ready to Fry Dry Pani Puri /Golgappe Puri Packet (available on amazon & Indian store)

Directions

  • Pani Puri filling is high in protein. No starchy vegetable used.
  • Combine all the beans into a bowl.
  • Add 2/3 cups of hot water and soak it for 3 to 4 hours.
  • After 4 hours the beans will double in size. So, they are now ready to be cooked.
  • Add the beans to the inner pot of the instant Pot. Close Lid.
  • Use Instant Pot Pressure cooker option at high temperature with 1 minute timer. OR use Pressure Cooker with 4/5 Whistles.
  • After the Instant Pot Pressure is naturally released. Open the Cooker and remove the beans. Drain the water out and wash it with cold water so beans don’t stick to each other.
  • In a bowl add cooked beans, add 1 tbsp. chat masala, 1 tbsp black salt and 1/4 tsp salt. Mix everything well and keep aside.
  • Meethi/Dates Chutney
  • In a bowl remove the seeds from the dates. Add 12 dates, 1/4 cup jaggery powder, 2 tbsp dry mango powder (Amchur), 1 tbsp red chili powder and 1/4tsp salt.
  • Add 2 cups of hot water and soak for 30 minutes.
  • After 30 minutes blend it into a fine paste.
  • Remove it from the blender jar and keep it aside.
  • Thika Pani (Mint Water)
  • In a blender jar add 2 cups of ice. This will help to retain the green color. Add 1 bunch of fresh mint leaves, 1/2 bunch of fresh cilantro leaves, 1 tsp chat masala,1 tsp cumin seed,1 tsp Kala Namak (black salt), 1/2 tsp black pepper powder,1 tsp salt, and 1 tbsp freshly squeezed lemon juice.
  • Blend it into a fine paste. Make it as fine as possible.
  • In a bowl, add 1 cup of ice, then add mint/cilantro paste with 4 cups of water. Mix everything well. Add 1/4 tsp asfofetida (Hing) and stir again.
  • For Oil Free Pani Puri
  • Open the Puri packet and spread evenly to the baking tray. Bake at 350F OR 176C for 5 minutes
  • Open the Puri packet and spread evenly to the Air fryer Basket at 380 F OR 193C for 2 minutes.
